Super Simple Soup {Chicken Noodle}

This isn’t really a recipe, rather it’s more of a how to…. which means there are many ways to make chicken noodle soup and end up with the same result – depending on your preference, ingredients on hand and amount of time.

The story behind the picture is that I had a bad cold and so did my daughter. She asked if we had any chicken noodle soup and I said no, but…. I can make some quickly & easily. She was heading home from work, so I asked her to pick up some egg noodles, carrots* & celery from the store along the way. (Eventually, I will post a recipe for egg noodles, but any pasta noodle that you have will work – think, spaghetti broken into tiny pieces etc.)

*pictured are cut-up baby carrots, but shredded carrots and cut up full-size carrots work just as well.

Trader Joes’ is one of my most favorite places to shop and I do most of my everyday grocery shopping there. This means my pantry is full of their products, but use your favorite brand.

I had a few boxes of Trader Joes Organic Chicken stock on my pantry (and a few boxes of instant liquid stock) so that it what I used this time. Ideally, I like to keep homemade vegetable and chicken stock in my freezer. I also happened to have a bunch of pre-cooked, quartered chicken breasts in my freezer so I used those, too.

 

Trader Joe’s also sells a package of “soup-starter” veggies – Mirepoix – carrots, onions & celery which you could purchase fresh, or freeze or just make your own and freeze.

FYI: drop biscuits go very well with this soup and can be made alongside the soup.

Directions
  1. Use any pre-cooked chicken. I pulled mine from the freezer.
  2. Bring stock & chicken to a boil, then simmer 10 minutes. (Pull out chicken if you want to shred it).
  3. Add cut carrots & celery, shredded chicken, egg noodles & boil for 10 minutes. (Season to taste... garlic, onion, salt, etc.)
Recipe Notes

Costco sells rotisserie chicken meat, off the bone & pre-pacackaged (freezes well)

Freeze left-over chicken and save for soup

Trader Joes and most grocery stores sell, pre-cooked package chicken strips

**Pre-cooked chicken strips are also tasty in homemade Chicken Caesar Salad**
