Mexican French Toast
The name is kind-of funny when you think about it – Mexican French Toast – is it Mexican or is it French 😉
I am always excited when I make something (or when someone else does) that all my kiddos enjoy eating. This is one of those things… and the best thing about it – my kids think I’m doing something extra special for them when I make it.
This time, I actually did do something special. The morning I made this, my children asked me to make Mexican French Toast. The night before, I made a loaf Pan di Mie bread while we slept with the help of my friend Mr. Load. We woke up the next day to a fresh-baked loaf of bread which I turned into Mexican French toast.
A sweet cinnamon version of a breakfast classic.
- 1 tsp ground cinnamon
- 2 TBL sugar
- 1 loaf french toast bread any bread will work
Crack the eggs and whisk together in a bowl.
Heat a frying pan or griddle on medium heat.
Dip a slice of bread into the egg. Make sure to coat both side of the bread.
Add a little butter to the heated griddle. Then place the egg covered bread inside. Fry until the egg is cooked and desired browness is achieved. Approximately 1-2 minutes per side.
Place warm, just out of the frying pan bread slices in the bowl of cinnamon sugar. Turn to coat both side of the toast.
Serve & Enjoy!!
You can control the amount of sugar and of course balance the meal with milk, fruit, yogurt etc… or just indulge yourself with a cup of coffee!!
